​Over 100 Lbs of Murasaki Sweet Potatoes! (Harvest Footage)

Raw, unedited footage of harvesting over 100 lbs of Murasaki sweet potatoes! ​In this video, I’m digging up the crop planted back in July. In just about 3 months of growth, these vines delivered a massive yield of deep purple, high-quality tubers. I didn't trim the vines back before hand so the skins were really fragile and got scraped up. In the future I may consider doing that so the potato es will look better and probably store better. But I do like the idea of leaving the vines alive because it keeps the ground covered and it's better for the soil. ​About the Murasaki Variety: Murasaki (often called Japanese Sweet Potato) is famous for its distinctive dark purple-red skin and bright white-to-cream flesh that turns a deep golden yellow when cooked. Unlike standard orange sweet potatoes (like Beauregard or Covington), Murasaki tubers are drier, starchier, and noticeably sweeter, featuring a rich, nutty flavor reminiscent of roasted chestnuts.
