Ingredients
5 small glasses rice
9 glasses water
Soya chunks – as required
1 large onion, roughly chopped
4 small–medium carrots
7–8 French beans
1 large potato
7–8 green chillies, slit
Ginger-garlic paste – as required
Coriander leaves
Mint leaves
Kasuri methi
Salt – as required
Oil – as required
2 tsp ghee
Whole Spices
1 bay leaf
Cardamom
Cloves
Cinnamon
Simple Process
Soak 5 small glasses of rice for 1 hour, then drain.
Soak the soya chunks in hot water for 20 minutes. Rinse and squeeze out the excess water.
Heat oil and 2 tsp ghee in a pressure cooker. Add the whole spices and sauté briefly.
Add chopped onion and sauté until soft and lightly golden.
Add ginger-garlic paste and cook until the raw smell disappears.
Add carrots, beans, potato, green chillies, and salt. Sauté until the vegetables are slightly cooked.
Add the squeezed soya chunks and sauté for a few minutes.
Add coriander, mint, and kasuri methi. Mix well.
Add 9 glasses of water and bring it to a good boil.
Add the soaked, drained rice and gently mix. Check and adjust the salt.
Close the pressure cooker and cook for 2 whistles; switch off the flame before the 3rd whistle.
Allow the pressure to release naturally. Open and gently fluff the pulao.
Serve hot with raita, curd, or your favorite side dish.
