Hainanese chicken rice is a whole chicken poached just below a simmer, rice cooked in the poaching stock and the chicken fat until it is pale gold, and three sauces on the side. It began in Wenchang on Hainan island and sailed south with immigrants to the ports of the Straits. This is the story of how it travelled. We follow it from a grandmother's kitchen where nothing was thrown away, onto the ships to Singapore, Malacca and Penang, through the three crafts hidden in every plate — the ice bath that sets the skin, the rice that is the real test of a stall, the sauces you build your own bite from — and out to the hawker plate, the Malacca rice ball and Thailand's khao man gai. Three plates, one family. 🌐 More stories at backstory.asia CHAPTERS 0:00 It looks almost too simple 0:32 The grandmother dish, Wenchang 1:13 Ships south 1:52 The craft, three secrets 2:44 One grandmother, many grandchildren 3:23 A village lunch goes global 3:52 More than a plate 4:29 backstory.asia ⚠️ ABOUT THIS VIDEO This episode is AI-generated.
