In 1892 a rich New York woman's morning began the night before, with a few orders given by the drawing room fire at 10 p.m. By the time she pressed the bell beside her bed near 9 the next morning, about 10 servants had already been at work since 6, lighting the furnace, scrubbing the front steps and carrying hot water up the back stairs. Her breakfast came up on a tray in a footman's arms: a teapot, sugar and cream, toast, boiled eggs and a little pat of butter, often in a Satsuma tea set. A household like hers cooked 9 meals a day, and the whole staff's 3 dark hours of work before she woke cost about $2.30 in wages. So how much of her morning was really her own?
