Hello November! Welcome to another cozy vlog from Saskatchewan, Canada!
Winter has arrived a little early this year (maybe a bit too early). With the grey skies and snow on the ground, I've been feeling a bit tired lately and have been struggling to find my usual motivation.
This week, we're mostly hanging out at home, but we do go on a quick trip to the Co-op and to the butche for some groceries to make a delicious gnocchi bolognese for dinner. Later, we get out and enjoy an early winter walk in the snow to get some much needed fresh air.
I'm also sharing a few of my favourite winter wardrobe essentials, including my new base layer and some unbelievably comfortable pants from Costco, along with my winter skincare routine and the products I've been using lately.
I hope you'll enjoy spending a little time with me as we settle into the slower days of November.
Thank you so much for being here, and I hope you have a lovely week!

Gnocchi Bolognese Recipe
------------------
Rich, Slow-Simmered Beef Bolognese
Ingredients
1lb mixed ground beef & pork
1 medium onion, finely diced
2 medium carrots, grated
2 celery stalks, finely diced
4 cloves garlic, minced
2 tbsp olive oil
1 jar marinara
½ cup chicken or beef stock
¾ cup whole milk (or 1/4 cup cream & 1/2 cup whole milk)
1 tsp dried oregano
½ tsp dried thyme
1 bay leaf
½ tsp freshly ground black pepper
Parmesan cheese, for serving
500–600 g pasta
Instructions
1. Soften the vegetables. Heat olive oil in a heavy pot over medium heat. Add onion, carrot, and celery. Cook for 10–12 minutes, stirring occasionally, until softened and beginning to caramelize.
2. Brown the beef. Add the ground beef and turn up the heat slightly. Break it into small pieces and cook until the moisture evaporates and the meat begins to brown, about 10 minutes. Don't rush this step.
3. Add garlic.
4. Deglaze. Use a splash of beef stock and scrape up the browned bits.
5. Add the marinara and simmer gently under the moisture has evaporated and the flavours have had time to infuse.
6. Add the milk. Stir in the milk and simmer gently for 5 minutes.
7. Simmer. Add oregano, thyme, bay leaf, salt and pepper. Bring to a gentle simmer.
8. Cook low and slow. Partially cover and simmer on low stirring occasionally.
9. Finish. Remove the bay leaf, taste and adjust seasoning. Toss the sauce directly with cooked pasta. Serve with freshly grated Parmesan.
