My Chicken Biryani Cooking Method (Step-by-Step) Step 1: Preparing the Chicken First, I wash the chicken thoroughly under clean running water and allow all the excess water to drain completely. It is important to remove as much moisture as possible so that the marinade coats the chicken evenly. --- Step 2: Marinating the Chicken I place the cleaned chicken in a large mixing bowl. Then I add plain yogurt, ginger paste, garlic paste, garam masala, roast spice mix, red chili powder, cumin powder, salt, fried onions (beresta), and mustard oil. Using my hands, I mix everything thoroughly until every piece of chicken is evenly coated with the marinade. I make sure that all the spices are well combined and cover every part of the chicken. Once the chicken is fully coated, I cover the bowl and let it marinate for about *1 to 1½ hours* so the flavors can develop. --- Step 3: Frying the Onions I heat enough cooking oil in a deep pan over medium heat. Once the oil is hot, I add thinly sliced onions and fry them, stirring occasionally to ensure they cook evenly. I continue frying until they turn a deep golden brown. When the onions reach the desired color, I remove them from the oil and set them aside. These fried onions (beresta) will add both flavor and richness to the biryani. --- Step 4: Cooking the Chicken Using the same pan, I add the marinated chicken to the remaining oil. I cook the chicken over medium heat for a few minutes while stirring occasionally. Then I add green chilies, ground peanuts, and a little water. I mix everything well and cover the pan with a lid. The chicken is cooked over medium heat, and I stir it occasionally to prevent the spices from sticking to the bottom of the pan. I continue cooking until the chicken becomes tender and the gravy thickens to the desired consistency. --- Step 5: Cooking the Rice In a large pot, I bring plenty of water to a boil. Before adding the rice, I season the water with bay leaves, green cardamom, cloves, black peppercorns, cinnamon sticks, cumin seeds, and salt. Once the water reaches a rolling boil, I add the washed and soaked rice. The rice is cooked until it is almost done. During cooking, I stir it gently from time to time to prevent the grains from breaking. When the rice is nearly cooked, I drain any excess water. --- Step 6: Combining the Chicken and Rice After the rice is nearly cooked, I add the cooked chicken to the rice. Using a large spoon, I gently mix the chicken and rice together, taking care not to break the rice grains or the chicken pieces. I cover the pot with a lid and continue cooking over low heat for a little longer, allowing the rice and chicken to absorb each other's flavors. --- Step 7: Serving Once the cooking is complete, I turn off the heat and let the biryani rest with the lid on for about 5–10 minutes. Finally, I gently fluff the rice with a large spoon before serving the biryani hot.
