Slow Cooker 15 Bean Soup With Smoked Turkey and Collard Greens

Slow cooker 15 bean soup with smoked turkey necks and collard greens. Beans soaked overnight, turkey falling off the bone, and one pot that feeds everybody. Full recipe and my seasoning blend are below. I skipped the packet. The collard greens came straight out of my garden right before I started. 15 BEAN SOUP WITH SMOKED TURKEY NECKS AND COLLARDS INGREDIENTS 1 bag 15 bean soup mix, about 20 oz, soaked overnight 2 to 3 smoked turkey necks, about 1 to 1.5 lbs 1 bunch collard greens, cleaned and chopped 1 yellow onion, diced 1 green bell pepper, diced 2 celery stalks, chopped 4 to 5 garlic cloves, minced 6 cups chicken broth 1 cup water 1 can diced tomatoes, drained 1 whole Scotch bonnet, optional MY SEASONING BLEND I skipped the seasoning packet that came with the beans and seasoned mine with: 1 tsp smoked paprika 1 tsp garlic powder 1 tsp onion powder 1 tsp dried thyme 1/2 tsp black pepper 1/2 tsp Cajun seasoning 2 bay leaves If you want to keep it simple, you can absolutely use the seasoning packet that comes with your 15 bean mix instead. TO FINISH 1 tbsp Worcestershire sauce 1 tbsp apple cider vinegar 1 tsp brown sugar, optional Better Than Bouillon chicken base, if needed after tasting DIRECTIONS 1. Soak the beans overnight. Drain and rinse before cooking. 2. Add the beans, onion, bell pepper, celery, garlic, smoked turkey necks, seasonings, chicken broth, and water to the slow cooker. 3. Add the cleaned and chopped collard greens. If using a Scotch bonnet, add it whole. Do not cut or puncture it unless you want some serious heat! 4. Cook on HIGH for about 4 to 5 hours. Since the beans were soaked overnight, start checking them around 3 1/2 hours. Test one of the larger beans to make sure it is completely tender. 5. Once the beans are tender, take out the turkey necks. Pull the meat off the bones, shred it, and add the turkey back to the soup. Remove the bay leaves and the whole Scotch bonnet. 6. Add the diced tomatoes, Worcestershire sauce, apple cider vinegar, and brown sugar, if using. 7. Cook for another 20 to 30 minutes on HIGH. 8. Taste before adding any additional salt. The smoked turkey and broth already bring plenty of flavor. Add a little Better Than Bouillon or additional seasoning only if needed. If you like your bean soup thicker, mash a small scoop of beans against the side of the slow cooker and stir them back in. This one is definitely going into our regular dinner rotation.
