Ingredients:
Almond Flour: 40 g( 1/3 cup + 1 tsp)
Rajgira Flour (Amaranth) :70 g (1/2 cup + 2 tsp)
Ghee :90 g (1/4 cup + 2½ tbsp)
Powdered Sugar 80 g : 2/3 cup ( 1/2 cup + 2 tbsp)
Cardamom Powder :½ tsp
Sendha Namak (Rock Salt): ¼ tsp
Almonds for Garnish 10 pcs
Method:
1. Take a large mixing bowl. Do not melt the ghee. It should be at room temperature in a semi-solid state.
2. Add the Ghee (तूप) and Powdered Sugar (पिठीसाखर) to the bowl.
3. Using a whisk or a fork, beat the ghee and sugar together vigorously for 3 to 4 minutes. Keep mixing until the color turns pale, and the texture becomes smooth, light, and creamy.
4. In a separate bowl, gently mix the dry ingredients: Rajgira Flour, Almond Flour, Cardamom Powder, Rock Salt.
5. Add the dry flour mixture into your creamed ghee-sugar bowl.
6. Use your fingertips to gently mix it all together until it forms a uniform, crumbly dough. Do not knead it heavily like roti dough, or the nankhatai will become tough.
7. Preheat your oven or OTG to 160°C and line your baking tray with parchment paper.
8. Pull small portions of the dough (about 1 tablespoon each) and roll them into smooth balls between your palms.
9. Place them on the baking sheet leaving at least a 1-inch gap between each nankhatai.
10.Gently press down on the center of each ball with your thumb to flatten it slightly. Press a piece of Almond (बदाम तुकडा) firmly into the center of each cookie.
11. Bake on the middle rack at 160°C for 12 to 15 minutes.
12.Watch closely: they are done when the edges look lightly golden-brown, though the center will still feel very soft to the touch.
13. Do not touch them immediately. Pull the tray out and let the nankhatai sit completely undisturbed for 10 minutes. They will crisp up beautifully as the ghee cools down. Transfer them to a wire rack to cool fully before storing.
