BROWN SUGAR CINNAMON CRUMB MUFFINS
Yield: 14 large muffins
Prep Time: 20–25 minutes
Bake Time: 15–20 minutes
Oven: 375°F (190°C), then 350°F (175°C)
Brown Sugar Cinnamon Crumb
1 cup (203 g) packed brown sugar
1⅛ cups (143 g) all-purpose flour
1½ tablespoons ground cinnamon
Up to 9 tablespoons (128 g) cold unsalted butter
*The crumb quantities have been adjusted to reduce leftovers from my original batch and haven't been separately tested yet.
Muffin Batter
2⅔ cups (332 g) all-purpose flour
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
1 cup (226 g) unsalted butter, softened
1½ cups (300 g) granulated sugar
4 large eggs
1½ Tablespoons vanilla bean paste
1 cup (240 g) plain Greek yogurt
4 Tablespoons cup (60 ml) milk
INSTRUCTIONS
1. Make the Cinnamon Crumb
In a bowl, combine the brown sugar, flour, and cinnamon. Gradually work in the cold butter until the mixture resembles coarse, damp sand with small clumps. Set aside.
2. Prepare the Muffin Batter
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
Cream the softened butter and sugar until light and fluffy. Add the eggs and vanilla bean paste, mixing until incorporated.
Add the Greek yogurt and milk together, mixing until combined.
Gradually add the dry ingredients, mixing just until incorporated. Be careful not to overmix!
3. Assemble the Muffins
Line muffin pans with parchment liners.
Add a layer of muffin batter, followed by a layer of cinnamon crumb. Cover with more batter and finish with a generous layer of cinnamon crumb topping.
4. Bake
Preheat your oven to 375°F (190°C) using conventional top and bottom heat.
Bake for 5 minutes, then reduce the temperature to 350°F (175°C) without opening the oven door.
Continue baking for approximately 12–25 minutes, or until a toothpick inserted into the cake portion comes out clean or with a few moist crumbs.
5. Cool & Enjoy!
Allow the muffins to cool in the pan for 5–10 minutes before transferring them to a wire rack.
Enjoy! 🤎

BAKING NOTES *
Greek yogurt keeps these muffins wonderfully soft and tender.
Vanilla bean paste adds a deliciously rich vanilla flavor.
Add the butter to the cinnamon crumb gradually until you reach the desired consistency.
Don't overmix the batter once the flour is added!
The crumb quantities have been adjusted to reduce leftovers from my original batch and haven't been separately tested yet.
