In today's cooking vlog, I'm sharing the authentic Tulu Nadu Special Patrode Recipe, a delicious traditional dish made with colocasia (taro) leaves, rice, spices, and coconut. This village-style recipe is full of rich flavors and is perfect for family meals and festive occasions.

Ingredients :
ಬೆಳ್ತಿಗೆ ಅಕ್ಕಿ White Rice - 4 Glass
ಉದ್ದಿನ ಬೇಳೆ Urad Dal - ½ Glass
ಒಣ ಮೆಣಸು Dried Red Chillies - 20–25
ಈರುಳ್ಳಿ Onion - 1
ಅರಿಶಿನ ಪುಡಿ Turmeric Powder - 1 Tsp
ಕರಿಬೇವಿನ ಸೊಪ್ಪು (ಹುರಿದ) Roasted Curry Leaves - A Few
ಉದ್ದಿನ ಬೇಳೆ (ಹುರಿದ) Roasted Urad Dal - 1 Tsp
ಮೆಂತ್ಯ Fenugreek Seeds - 1 Pinch
ಸಾಸಿವೆ Mustard Seeds - ½ Tsp
ಕಾಳು ಮೆಣಸು Black Peppercorns - 7–8
ಜೀರಿಗೆ Cumin Seeds - ½ Tsp
ಕೊತ್ತಂಬರಿ Coriander Seeds - 2 Tbsp
ಬೆಳ್ಳುಳ್ಳಿ Garlic Cloves - 4–5
ಹುಣಸೆಹಣ್ಣು Tamarind - ½ Lemon Size
ಉಪ್ಪು Salt - To Taste
ಕೆಸುವಿನ ಎಲೆ Colocasia (Taro) Leaves - 30–40 Leaves
ಒಗ್ಗರಣೆಗೆ (For Tempering) :
ಎಣ್ಣೆ Oil - 3–4 Tbsp
ಸಾಸಿವೆ Mustard Seeds - 1 Tsp
ಉದ್ದಿನ ಬೇಳೆ Urad Dal - 2 Tsp
ಕಡಲೆ ಬೇಳೆ Chana Dal - 1 Tsp
ಬೆಳ್ಳುಳ್ಳಿ Crushed Garlic - 3–4 Cloves
ಕರಿಬೇವಿನ ಸೊಪ್ಪು Curry Leaves - 10–15
ಹಸಿಮೆಣಸು Green Chillies - 2
ಈರುಳ್ಳಿ Onions (Sliced) - 3
ಉಪ್ಪು Salt - To Taste
ತೆಂಗಿನ ತುರಿ Grated Coconut - ½ Coconut
ಬೆಲ್ಲ Jaggery - 1–2 Tbsp (or to taste)
ಖಾರದ ಪುಡಿ Red Chilli Powder (Optional) - 1 Tsp
To prepare Patrode, first soak the rice. Take a bowl and add 4 glasses of white rice and ½ glass of urad dal. Wash them thoroughly and soak them for 7–8 hours.
After 8 hours, transfer the soaked rice to a mixer jar. Add 20–25 dried red chilies (adjust according to your spice preference), 1 chopped onion, 1 teaspoon turmeric powder, a few roasted curry leaves, a little roasted urad dal, 1 pinch of fenugreek seeds, ½ teaspoon mustard seeds, 7–8 black peppercorns, ½ teaspoon cumin seeds, 2 tablespoons coriander seeds, 4–5 garlic cloves, half a lemon-sized tamarind, and salt to taste. Grind everything into a smooth paste and keep it aside.
Next, wash the colocasia (taro) leaves thoroughly. Spread the prepared masala evenly over each leaf, stack and roll the leaves, then steam them until fully cooked. Once cooked, let them cool slightly and cut them into small pieces.
To prepare the tempering, heat a pan and add 3–4 tablespoons of oil. Once the oil is hot, add 1 teaspoon mustard seeds, 2 teaspoons urad dal, 1 teaspoon chana dal, 3–4 crushed garlic cloves, and 10–15 curry leaves. Sauté for a few seconds.
Then add 2 chopped green chilies and 3 thinly sliced onions. Fry well until the onions become soft. Add a little salt and continue sautéing. Next, add ½ grated coconut and a little jaggery, then mix everything well. If you prefer a spicier flavor, you can also add 1 teaspoon red chili powder.
Once everything is well sautéed, add the steamed and chopped Patrode pieces to the tempering. Mix everything thoroughly until the masala coats the Patrode evenly.
