FERMENTED BERRIES from Freeze-Dried Fruit! • Fermented February Collaboration

RECIPE: 2 C mixed berries—fresh, frozen or rehydrated from dried or freeze-dried 2 T honey (or 3 T raw sugar, coconut sugar, monk fruit), or more to taste 2 T fresh whey, kombucha, or kefir 1/4 tsp finely ground salt Mix together in a bowl, then add to a pint mason jar. Add filtered water to 1-1/2 inch headspace. Press mixture down to be sure water has filled all the air pockets. Add more water if needed. Add a weight, making sure the berries are below the waterline. Cover and leave jar at room temperature for 1-2 days. Store in fridge and use within 1-2 months.
