Rice Laddu, also known as "Chawal ke Laddu," is a delicious and traditional Indian sweet made from rice flour, ghee (clarified butter), sugar, and flavored with cardamom. These laddus are soft, melt-in-your-mouth treats that are often prepared during festivals and special occasions.
To make rice laddus, rice flour is lightly roasted to bring out its nutty flavor and mixed with powdered sugar and cardamom. Warm ghee is added gradually to the mixture, binding it into a crumbly yet cohesive dough. Small portions of this mixture are then shaped into round laddus by hand. Some variations also include grated coconut or chopped nuts like cashews and almonds for added richness and texture. Mangalorean Rice Laddu, also known as Akkimudde or Rice Laddoo, is a traditional sweet that’s simple to make yet incredibly delicious. Here's a recipe you can follow:
Ingredients
1/2 kg rice (preferably boiled rice or any medium-grain rice)
1/2 kg grated jaggery (adjust to taste)
1/2 grated coconut (fresh or desiccated) slightly roasted
2 tablespoons ghee
1 teaspoon cardamom powder
A handful of roasted cashews and raisins (optional)
2 tbsp white sesame seds dry roasted
2 tbsp black sesame seeds dry roasted
Pinch of salt (optional)
Instructions
Roast the Rice:
Dry roast the rice in a pan on medium heat until it turns golden brown and you get a nice aroma. This might take 5–7 minutes. Make sure to stir continuously to avoid burning.
Let the rice cool completely.
Grind the Rice:
Once cooled, grind the roasted rice into a fine powder using a blender or a spice grinder.
Combine Ingredients
In a large mixing bowl, add the rice powder, grated jaggery, grated coconut, and cardamom powder. Mix well.
Add Ghee:
Heat the ghee until melted, then add it to the mixture. The ghee helps bind the mixture and adds richness to the laddus.
Form the Laddus:
Mix everything thoroughly until it holds together. If the mixture is too dry, add a little more melted ghee.
Take small portions of the mixture and roll them into laddus.
You can add roasted cashews and raisins to each laddu for extra flavor and texture.
Serve and Store:
Enjoy immediately or store the laddus in an airtight container for up to a week.
