Have you ever tried Moongphali ka Nimona? Nimona is popularly made with fresh green peas, especially in Bihar and Uttar Pradesh. In this recipe, we give it a delicious twist by using fresh raw peanuts along with spinach and coriander. Try this unique Peanut Nimona at home and let us know in the comments if you’ve ever had it this way! Ingredients For the Peanut Mixture 1 bowl fresh raw peanuts, shelled and washed A small portion of peanuts, kept whole Water, as required For the Green Masala 1 bowl chopped spinach and coriander leaves 2 garlic cloves ½-inch piece ginger 4 green chillies A little water, as required For the Nimona Mustard oil, as required 1 tsp cumin seeds 1–2 dry red chillies 1–2 bay leaves 1 green cardamom 2 cloves A few whole black peppercorns ½ tsp coriander powder Slightly less than ½ tsp red chilli powder, or to taste Turmeric powder, as required ½ tsp salt, or to taste Water, as required Recipe 1. Shell the fresh raw peanuts and wash them thoroughly. 2. Keep a small portion of the peanuts aside to add whole later. 3. Add a little water to the remaining peanuts and grind them coarsely. Do not make a smooth paste. 4. Grind the chopped spinach and coriander leaves along with garlic, ginger and green chillies to make a coarse green masala. 5. Heat mustard oil in a kadhai. 6. Add cumin seeds. Once they splutter, add dry red chillies, bay leaves, cardamom, cloves and whole black peppercorns. 7. Sauté the whole spices well. 8. Lower the flame and add coriander powder, red chilli powder and turmeric. Mix quickly so the spices don’t burn. 9. Immediately add the coarsely ground peanuts and mix well. 10. Add the whole peanuts that were kept aside. 11. Add the ground spinach-coriander masala and mix everything together. 12. Add salt to taste. 13. Cook covered on low-medium flame for 5–7 minutes, stirring occasionally. Add a little water if required to achieve the desired consistency. 14. Once the peanuts and greens are cooked and the flavours have come together, your Moongphali ka Nimona is ready!
