And even if you do follow all the rules, it doesn’t mean that the fat or oil you are consuming is the best for you. This video makes it very simple: Just eat the fats and oils which are the easiest to digest. Which means: just have organic extra virgin cold-pressed olive oil and cultured ghee. Most people understand how important olive oil is, but few understand the benefits of ghee. Plus, most people don’t realize that the ancient doctors were talking about cultured ghee when they recommended ghee in the diet. Making the ghee from yogurt helps to convert the lactose (the sugar in the milk) into lactic acid, which lowers the pH from 6.6 to 4.5, which means it makes it more acidic, providing the heat to break down the fats, proteins and sugars into smaller particles, making it very easy for us to digest and assimilate those very important nutrients. Once the cultured butter is made from the yogurt starter, then the butter is clarified, also adding heat to further help our digestion of the ghee. Contrast this to eating coconut oil which is so cold and waxy and extremely saturated at 80% saturation — even more saturated than red meat! On the other hand, flax oil is so hot it can damage both the liver and spleen if ingested. Many people have been told their whole lives that cholesterol is bad for them, so they just have olive oil in the diet and aren’t interested in eating ghee. Hopefully this video will clear up those misconceptions and help you realize that we need this very important type of fat in our diet, this cholesterol, where the fermentation process (turning the cream into yogurt) and the resultant clarifying process (clarifying the cultured butter) turn the resultant ghee into probably one of THE most nourishing foods on the planet. Don’t forget — you need cholesterol to nourish your brain, to provide the raw materials to help you make your hormones into old age, and to provide the fat needed for every cell wall in your body. And by this very specific type of processing of the ghee, it won’t clog your arteries, but instead will be absorbed into your bloodstream and taken up into all the cells of your body at a very deep level.
