Ingredients For the Fish Marination: Bola Mach (Croaker Fish):500 grams (cut into thick steaks) Turmeric Powder:½ tsp Salt:To taste Lemon Juice: 1 tsp For the Ghee Roast Masala Paste Kashmiri Dry Red Chillies: 5-6 (for that rich, bright red color without too much heat) Spicy Dry Red Chillies:2-3 (adjust to taste) Coriander Seeds (Gota Dhone):1.5 tbsp Cumin Seeds (Gota Jeere):1 tsp Fennel Seeds (Mouri) ½ tsp Black Peppercorns (Golmorich):½ tsp Fenugreek Seeds (Methi):¼ tsp Garlic: 8-10 cloves Tamarind Paste:1 tbsp (soaked in a little warm water) For the Gravy/Base: Pure Desi Ghee: 4-5 tbsp (do not skimp, this is the star ingredient!) Onion:2 medium, very finely chopped Ginger Paste:1 tsp Curry Leaves 1 sprig (optional, but adds a wonderful aroma) Salt:To taste Jaggery or Sugar:½ tsp (to balance the tanginess of the tamarind) --- Instructions Wash and clean the Bola mach pieces thoroughly. Pat them dry with a paper towel. Rub them well with turmeric powder, salt, and a splash of lemon juice. Keep aside for 15-20 minutes. 1. Heat a pan on low flame. Dry roast the Kashmiri chillies, spicy red chillies, coriander seeds, cumin seeds, fennel seeds, black peppercorns, and fenugreek seeds. 2. Roast for 2-3 minutes until they turn highly aromatic. Do not let them burn. Allow them to cool completely. 3. Transfer the roasted spices to a mixer grinder. Add the garlic cloves and tamarind paste. Grind into a smooth, thick paste using a little water. 1. Heat 2 tbsp of ghee in a wide, heavy-bottomed pan or kadai over medium heat. 2. Gently fry the marinated Bola mach pieces until they are lightly golden on both sides (about 2 minutes per side). Bola mach is very delicate, so handle carefully. 3. Remove the fish from the pan and set aside. 1. In the same pan, add the remaining 2-3 tbsp of ghee. 2. Add the finely chopped onions (and curry leaves, if using). Fry until the onions turn deep golden brown. 3. Add the ginger paste and sauté for another minute until the raw smell disappears. 4. Lower the heat and add your freshly ground Ghee Roast Masala paste. Mix well. 5. Cook the masala patiently on low-medium heat for 7-10 minutes, stirring continuously, until the ghee starts separating from the sides and the masala becomes a deep, glossy red. 6. Add salt to taste and a pinch of jaggery to balance the flavors. Add about ¼ cup of warm water to adjust the consistency. 1. Once the masala is perfectly cooked and bubbling, gently slide the fried fish pieces back into the pan. 2. Carefully coat each piece of fish with the thick masala. 3. Cover and let it simmer on the lowest heat for 3-4 minutes so the fish absorbs the robust flavors of the ghee and spices. 4. Turn off the flame. Serve immediately!
