Struggling with making jelly that sets? Nothing more frustrating! I have been making quince jelly since 2010 and have learned the hard way. Here are my own tips and tricks for successful jelly, whether it's quince or redcurrant, so have a look whether this works for you! The basics, also shown as an overview at the end: 600ml strained juice 400g sugar 1 lemon Heat up - stir until sugar dissolved. Keep on low heat, don't stir for 15-20 mins Scoop off the white foam 3x Prep jars Full heat + slow stirring When liquid comes to edge of pot, keep it there for 6 mins. Lower heat for 2-3 mins. Bring to edge of pot for another 6 minutes. A couple of warning: Don't squish the fruit when scooping into muslin for straining, otherwise you won't get clear jelly. Use the same pot throughout, and only one batch at a time - you need space in the pot for bubbles to come up fully. Good luck!
