We finally got out for some crabbing and fishing in Deep Bayou using handlines. The crabs were slow and small at first and then the big ones came out. Of course, the Gators wanted in on the action and tried gobbling the chicken quarters. #bluecrab, #Louisianabluecrab, #cuaxanh, #Zatarains, #seafood, To Catch: Chicken Leg Quarters or Legs Chicken Necks For each line: 20' of Nylon #8 Line 1each 5/8" Nut from the hardware store for weight. To Cook for Ba Sa (The Wife, aka The Boss): 1.5-2 Gallons of Water 2oz of Salt 2ea Lemons, cut in half and squeezed 1each Large Orange, cut in half and squeezed 1Tsp Zatarain's Seafood Boil Place the water in a large pot and add salt and stir until dissolved. Add the Lemons and Orange and Zatarain's and bring to a boil. Once the water is boiling vigorously, add the crabs. Once the water comes back up a vigorous boil, start your timer for 10 minutes. After the 10 minute mark, cut the heat and let soak for several minutes, remove after 5 minutes. When you're ready to eat, pour the crabs out on a place or large platter and your work is just starting! A butter knife is good for opening them to get at the meat. Or just use your hands, like Momma Ba Sa does! Some people add other things to the boil for spices and add-ons: Minced Garlic, Corn Cob, Sausage, Vinegar, etc. Experiment to see what you like and place it in the comment section.
