Traditional Indian pickles, or Achar, have been an integral part of Indian culinary heritage for centuries, originally developed as a preservation technique to store seasonal produce using natural preservatives like mustard, oil, and salt. Regional variations across Western India, especially Gujarat, showcase instantly made chopped chili and ginger pickles that elevate simple everyday meals like dal-rice, parathas, and khichdi. The combination of freshly chopped green chilies, ginger, and garlic, gently tempered with freshly roasted aromatic spices like fennel, coriander, cumin, and mustard, creates a perfect balance of heat, digestion-boosting herbs, and rich tangy flavors. This instant glass-jar pickle requires no sun-drying and stays fresh for a long time! Ingredients • 250 grams Green Chilies, हरी मिर्च • 15|20 Garlic Cloves, लहसुन • 2.5 inch Chopped Ginger, अदरक • 3 tsp Coriander Seeds, सुखा धनिया • 1 tsp Cumin, जीरा • 1.5 tsp Saunf, सौंफ • 1 tsp Mustard, राई • 1.5 tsp Yellow Mustard, पीली राई • 1 tsp Methi Seeds, मेथी दाने • 10 tbsp Peanut Oil, सींगतेल • ¼ tsp Hing, हिंग • ¼ tsp Turmeric, हल्दी • 1 tsp Salt, नमक • 2 tsp Red Chilli, लाल मिर्च • 2 tsp White Vinegar, सरका Step-by-Step Method: 1. Chop Fresh Ingredients: Finely chop 250g green chilies using a chopper. Coarsely chop 15–20 garlic cloves and 2.5 inches of ginger together in the chopper. 2. Roast Spices: In a pan on low flame, roast coriander seeds, cumin, saunf, mustard, yellow mustard, and methi seeds until all moisture vanishes. Turn off the flame, cool down, and crush into a coarse mix in a mixer grinder. 3. Temper Oil & Spices: In a pan, heat peanut oil. Add hing and turmeric powder, then pour in the freshly ground spice mix and stir well. 4. Mix & Season: Add the chopped green chilies, ginger, and garlic. Mix thoroughly. Add salt, red chili powder, and white vinegar. Stir everything together on low heat until properly coated. 5. Store: Allow the pickle to cool down completely and store it in a clean, airtight glass jar.
