🛒 INGREDIENTS LIST:
2 Large Bell Peppers (Red or Yellow)
10.5 oz (300g) Chicken Breast (diced into small cubes)
2 big handfuls Fresh Spinach (chopped)
1 Tomato or 6 Cherry Tomatoes (flesh only, seeds removed)
1 tbsp Sour Cream or Crème Fraîche
1 tbsp Whole Grain Mustard
The Secret: Dry Couscous or Almond Flour (1/2 tbsp per pepper half)The Glaze: 1 tbsp Olive Oil + Salt + Dried Garlic + 0.5 tsp Honey or Allulose SyrupTopping:
1.8 oz (50g) Gouda or Monterey Jack Cheese (shredded)
1 oz (30g) Parmesan
Salt & Black Pepper to taste
Dried Garlic & Herbs
🔥 COOKING INSTRUCTIONS:
Brush the inside of the peppers with the glaze (oil + honey/allulose + salt + dried garlic).
Pre-bake empty peppers at 360°F (180°C) for 6 minutes.
Add 1/2 tbsp of dry couscous (or almond flour) to the bottom of each hot pepper "boat".
Mix chicken, spinach, tomato, sour cream, mustard, and spices. Stuff the peppers tightly.
Bake at 340°F (170°C) for 12 minutes (this keeps the chicken juicy).
Top with the mixed cheeses and bake for another 2-3 minutes at 340°F (170°C) until golden.
