How Important Is Your Temp Sensor Location In a EFI Small Block Ford?

I installed the Vintage Air retrofit air conditioning/heater kit on my 1992 Ford Fox body Mustang 5.0 Notchback. This is an amazing kit that is literally plug and play. That said, I have noticed some temperature discrepancies between what my dash coolant temp sensor is reading and what my ECU coolant temp sensor is reading. Much of this - I believe - is due to the coolant flow shut off valve that gets installed during the Vintage Air HVAC kit.
