We grew 231 pounds of potatoes from just 40 pounds of seed potatoes — and now it’s time to preserve that harvest! 🥔🥫
Today I’m taking you from our incredible potato harvest all the way to the pantry as I show you how I hot pack and pressure can our homegrown potatoes for easy meals throughout the year.
I managed to put up 28 quart jars in my first big canning day, but I’m not finished yet! I still have a LOT of potatoes waiting for me, and my goal is to get as close as possible to 100 quart jars before I’m done. Will 231 pounds of potatoes actually give our family close to a year’s supply? We’re about to find out! 😅
In this video, I’ll recap how we turned 40 pounds of seed potatoes into a 231-pound harvest, then take you into the kitchen as I peel, prepare, hot pack and pressure can them for our pantry.

⚠️ Canning Safety: Always use a current, tested canning recipe and adjust pressure for your altitude and type of pressure canner. For this batch, I followed the tested National Center for Home Food Preservation instructions for pressure canning white potatoes. Quart jars are processed for 40 minutes, with the required pressure determined by your canner type and elevation.
