Beef Boti Achari
Ingredients:
• Boneless beef cubes – ½ kg
• Tomato puree – 1 cup
• Yogurt – 1 cup
• Curry leaves – 10
• Green chilies – 10
• Fennel seeds – 2 tsp
• Mustard seeds – 2 tsp
• Fresh coriander – ½ bunch, chopped
• Chaat masala – 1 tbsp
• Thick tamarind pulp – 2 tbsp
• Clarified butter – 1 cup
• Kashmiri red chili powder – 2 tsp
• Turmeric powder – 1 tsp
• Salt – 1 tsp
• Onions – 1–2, sliced
• Ginger-garlic paste – 1 tbsp
Method
Wash the beef and boil it until tender. Heat the clarified butter in a pan and fry the beef until it turns golden brown. Remove and set aside.
In a small bowl, combine the fennel seeds, mustard seeds, Kashmiri red chili powder, turmeric, and salt with ½ cup water to make a spice mixture.
In the same pan, fry the onions until golden brown. Add the tomato puree, yogurt, ginger-garlic paste, and the prepared spice mixture. Cook well until the masala is fragrant and the oil begins to separate.
Add the fried beef and mix thoroughly. Cover and cook on low heat for 10 minutes.
Slit the green chilies and stuff them with the tamarind pulp and chaat masala. Fry the stuffed chilies separately until lightly blistered.
Transfer the Achari Beef Boti to a serving dish, garnish with chopped fresh coriander and the fried stuffed green chilies, and serve hot.
Creamy Malai Chickpeas
Ingredients
• Boiled white chickpeas – ½ kg
• Fresh cream – 1 cup
• Yogurt – 1 cup
• Onion – 1, roughly chopped
• Tomatoes – 2, roughly chopped
• Green chilies – 4
• Garlic cloves – 4
• Turmeric powder – 1 tsp
• Salt – 1 tsp
• Red chili powder – 1 tsp
• Ginger, finely julienned – 50 g
• Green chilies and fresh coriander – as required, for garnish
• All spice powder – 1 tsp
• Whole spices – 1 tbsp
• Cooking oil – 1 cup
Method
Boil the white chickpeas until they are tender and set aside.
In a blender, combine the tomatoes, onion, green chilies, garlic, yogurt, and fresh cream. Blend until smooth and transfer the mixture to a bowl.
Heat the oil in a pan and add the whole spices. Once fragrant, add the red chili powder, turmeric, salt, and a splash of water. Stir well, then add the blended mixture and cook over medium heat until the masala thickens and the oil begins to separate.
Add the boiled chickpeas and mix well. Cover and cook on low heat for 10 minutes so the flavors are fully absorbed.
Transfer to a serving dish and garnish with chopped fresh coriander, sliced green chilies, and fried julienned ginger. Serve hot.
