Ingredients
Chicken – 1.5 kg
Basmati Rice – 1 kg
Yogurt – 1 cup
Ginger-Garlic Paste – 2 tbsp
Red Chilli Powder – 2 tbsp
Turmeric Powder – ½ tsp
Salt – as required
Fried Onions – 2 cups
Fresh Coriander – ½ cup
Fresh Mint – ½ cup
Lemon Juice – 2 tbsp
Oil – 1 cup
Kewra Water – 1–2 tsp
Meetha Attar – a few drops
Yellow Food Colour – as required
Homemade Biryani Masala Paste
Fennel Seeds
Cumin Seeds
Black Pepper
Cloves
Green Cardamom
Cinnamon Stick
Fresh Coriander
Green Chillies
For Rice
Bay Leaf
Cinnamon
Cloves
Green Cardamom
Black Cardamom
Cumin Seeds
Salt
Method
Prepare a smooth paste using fennel seeds, cumin, black pepper, cloves, cardamom, cinnamon, fresh coriander and green chillies.
Marinate the chicken with yogurt, ginger-garlic paste, red chilli powder, turmeric, salt, lemon juice, homemade biryani masala, mint, coriander, fried onions, Kewra Water and a few drops of Meetha Attar. Mix well and keep aside for 30 minutes.
Cook the marinated chicken in oil until tender and the masala is well cooked.
Meanwhile, boil the soaked basmati rice with salt and whole spices. Cook until 70% done, then drain.
Layer the cooked chicken with the rice. Add fried onions, mint, coriander, Kewra Water, a few drops of Meetha Attar and yellow food colour.
Cover tightly and cook on low flame for 15–20 minutes. Rest for 10 minutes, then gently fluff and serve hot.
