सुकेळी: वसईचा सुका मेवा SUKELI : Originally made by locals from Agashi Gaon in Vasai using the ample supply of home grown RAJELI Bananas . but now due to the scarcity they now are bought from Karnataka called MADRAS KELISince Vasai Taluka was more popular SUKELI also was called Vasai chi sukeli or Vasai cha Sukka MewaBananas are left to ripen in huge Mud pots or रंजन Ranjan for 2 days then in a closed room till completely ripe. These ripe bananas are sundried on कारवी " Karvi" - bamboo sticks as they're non toxic and the fruit dries well without causing any burnt marks on them. The bananas generously soak air and sunlight from all the sides. Fruits are kept out in the sun during the day and removed from the stand before sunset. During the 1st 2 days of drying these bananas release the sweetness and the water in them and later the water begins to evaporate. And by the end of the 5th day what's left is only the sweet sticky honey (fructose).
