In this video, I’m showing you why eggs were used in old-school Southern baked mac and cheese, what that evaporated milk was really doing in the pan, why the cheese was layered instead of just piled on top, and why Mama never rushed that pan straight from the oven to the table. This isn’t about saying there’s only one right way to make mac and cheese. Every family had their own way. I’m showing you the method I grew up around and explaining why those little steps mattered. A lot of what Mama and the old folks knew never made it onto a recipe card. You learned it by standing in the kitchen, watching their hands, and remembering what they did.
