In a bowl, combine the eggs, milk and salt. Mix well. In a shallow dish or plate, mix the sugar and cinnamon. Heat your pan or griddle. Spray with cooking spray or use butter. Dip each piece of bread in the egg mixture, shaking off any excess, and place on griddle/pan. Cook until a little brown and continue on all sides. Immediately place in the cinnamon/sugar and coat. Set aside to cool. Freeze on a cookie sheet and then place into a large freezer bag. MINI CORN DOG MUFFINS: (Makes 24) 1 box jiffy cornbread mix 4 hot dogs 1 egg 1/3 cup milk 2 tbsp melted butter Preheat oven to 400F. Cut the hot dogs into 24 equal pieces (each hot dog into 6 pieces). In a bowl mix the cornbread mix, butter, egg and milk. Don't over mix or the cornbread may fall apart after cooking. Spray a mini muffin pan well and then equally divide the cornbread mix. Place 1 piece of hot dog into each muffin and press in lightly. You will have some hot dog sticking up if you're using a bigger hot dog. Bake for 10 minutes. Let cool completely, pop out and place on a cookie sheet. Place in the freezer for at least and hour and then put them all into a large freezer bag. GRANOLA BARS: (In the video, I doubled this) 2 cups quick cooking oats 1 cup Rice Krispy cereal 1/4 cup shredded coconut 1/4 cup butter 1/4 cup honey 1/2 cup brown sugar 1/2 tsp salt 1/2 tsp vanilla 2 tbsp peanut butter Mini chocolate chips In a large bowl, mix the oats, cereal, salt and coconut. In a pan on the stove, add the butter, honey, brown sugar and bring to a boil. Let boil for 1-1 1/2 minutes. Take off heat and add the vanilla and peanut butter. Pour over the oat/cereal mixture and stir well. Work quickly as this will start to set up pretty fast. Let it cool for a few minutes if you're adding the chocolate chips. Once the chocolate is added, stir to distribute. Pour into a parchment lined 9x13 pan (or a very, very well greased one) and press firmly into the pan. Let them cool completely before removing from pan and cutting. REHEATING: Breakfast sandwich: From frozen-remove plastic, wrap in damp paper towel, microwave 30 second increments until heated through. From fridge-remove plastic and heat for 30 seconds in the microwave Uncrustables: Let them thaw in the fridge overnight, or put them frozen in lunch box and it will thaw by lunchtime Corn Dog Muffins: From frozen-Microwave for 1-2 minutes (30 seconds at a time) or until heated through.
