INGREDIENTS:
1. Maida / All-Purpose Flour (ಮೈದಾ): 200g
2. Suji (ಸೂಜಿ ): 2 tbsp
3. Salt (ಉಪ್ಪು): ¼ tsp
4. Hot Oil (ಬಿಸಿ ಎಣ್ಣೆ): 2 tbsp
5. Water (ನೀರು): as required, to knead the dough
6. Oil (ಎಣ್ಣೆ): as required
For the Filling
1. Ghee (ತುಪ್ಪ): 2 tbsp
2. Khas Khas / Poppy Seeds (ಗಸಗಸೆ): ½ tsp
3. Fresh Grated Coconut (ತಾಜಾ ತುರಿದ ತೆಂಗಿನಕಾಯಿ): 150g
4. Grated Jaggery (ತುರಿದ ಬೆಲ್ಲ): 120g
5. Chopped Nuts & Raisins: optional
6. Cardamom Powder (ಏಲಕ್ಕಿ ಪುಡಿ): ½ tsp
7. Nutmeg Powder (ಜಾಯಿಕಾಯಿ ಪುಡಿ): 1/4tsp
8. Milk (ಹಾಲು): as required, for sealing the edges
9. Oil (ಎಣ್ಣೆ): for deep frying
METHOD:
1. Prepare the dough:
In a bowl, add maida, suji and salt. Add hot oil and mix well.
2. Knead the dough:
Add water gradually and knead until you get a soft and firm dough. Add a little oil. Cover and rest the dough for 1 hour.
For the filling:
1. Heat ghee in a pan. Add khas khas/poppy seeds and sauté briefly.
2. Add fresh grated coconut and roast well.
3. Add grated jaggery and cook until the jaggery starts melting and the mixture becomes moist.
4. Add chopped nuts and raisins (optional), cardamom powder and nutmeg powder. Mix everything well and cook until the filling comes together.
5. After 1 hour, knead the dough again until smooth.
6. Shape the modak:
Take a portion of the dough and roll it into a small circle. Place the coconut-jaggery filling in the centre.
9. Seal & shape:
Apply a little milk around the edges. Bring the edges together and shape the modak with pleats. Seal it properly so the filling doesn't come out while frying.
10. Fry:
Heat oil and carefully fry the modaks on medium heat until they turn golden, crispy and cooked through.
