Lubina al horno con limón y hierbas 🍋🐟 | Jugosa, fácil y mediterránea

Hoy vamos a preparar una deliciosa lubina al horno aromatizada con limón, ajo, perejil fresco y aceite de oliva, acompañada de patatas baby, tomates cherry y cebolla roja. Una receta mediterránea muy fácil de preparar, colorida, jugosa y llena de sabor.
Para conseguir unas patatas doradas por fuera y tiernas por dentro, primero las cocino en la Air Fryer con pimentón ahumado antes de incorporarlas a la guarnición.
Para la lubina y su aromatización:
1 lubina entera de aproximadamente 1 kg (2.2 lb)
1 limón
3 dientes de ajo
Perejil fresco
Sal al gusto
Pimienta negra molida al gusto
Aceite de oliva
💡 ¿No encuentras lubina? Esta misma preparación queda estupenda con dorada, pargo rojo, branzino/lubina europea, trucha entera o cualquier otro pescado blanco firme similar. Solo tendrás que ajustar el tiempo de cocción dependiendo del tamaño y grosor del pescado.
Para la guarnición:
450 g (1 lb) de patatas baby rojas
250 g (8.8 oz) de tomates cherry
½ cebolla roja cortada finamente
100 ml (aprox. ⅓ taza + 1 cucharada) de vino blanco seco
Yo he utilizado patatas baby rojas, pero también puedes utilizar baby Yukon Gold, patatas amarillas, fingerling potatoes o cualquier otra variedad de patata pequeña y firme.
Para sazonar las patatas antes de cocinarlas en la Air Fryer:
Sal
Pimienta negra molida
½ cucharadita de Pimentón de la Vera (pimentón ahumado)
Un chorrito de aceite de oliva
🔥 Después solo queda reunir todos estos sabores alrededor de la lubina y terminar la cocción hasta conseguir un pescado jugoso y aromático, acompañado de una guarnición mediterránea llena de color y sabor.

Today we're preparing a delicious baked sea bass flavored with lemon, garlic, parsley, and olive oil, accompanied by baby potatoes, cherry tomatoes, and red onion. A very easy-to-prepare Mediterranean recipe, colorful and full of flavor.
To get potatoes that are golden on the outside and tender on the inside, I first cook them in the Air Fryer with smoked paprika before adding them to the side dish.
🐟 INGREDIENTS
For the sea bass and its flavoring:
1 whole sea bass, approximately 1 kg (2.2 lb)
1 lemon
3 cloves of garlic
Fresh parsley
Salt to taste
Ground black pepper to taste
Olive oil
💡 Can't find sea bass? This same preparation works wonderfully with sea bream, red snapper, European sea bass, whole trout, or even a similar firm white fish. The cooking time will need to be adjusted depending on the size and thickness of the fish.
For the garnish:

250g (8.8 oz) cherry tomatoes
½ red onion, thinly sliced
100ml (approx. ⅓ cup + 1 tbsp) dry white wine
I used baby red potatoes, but you can also use baby Yukon Gold, yellow potatoes, fingerling potatoes, or any small, firm potato.
To season the potatoes before the air fryer:
Salt
Ground black pepper
½ teaspoon smoked paprika
A drizzle of olive oil
🔥 Then all that's left is to bring all those flavors together around the sea bass and finish the dish to achieve a juicy and aromatic fish, with a colorful garnish.

For the sea bass and seasoning:
1 whole sea bass, approximately 2.2 lb (1 kg)
1 lemon
3 garlic cloves
fresh parsley
Salt to taste
Ground black pepper to taste

💡 Can't find sea bass? You can also make this recipe with whole branzino/European sea bass, sea bream, red snapper, whole trout, or another similar firm white fish. Simply adjust the cooking time according to the size and thickness of your fish.
For the vegetables:
1 lb (450 g) red baby potatoes
8.8 oz (250 g) cherry tomatoes
½ red onion, thinly sliced
⅓ cup + 1 tbsp (100 ml) dry white wine
I used red baby potatoes, but baby Yukon Gold, yellow baby potatoes, fingerling potatoes, or another small waxy potato will work beautifully.
