It’s so lovely to sit down with you again and share a few little stories from everyday life. After a week of rainy days and a little flu, my husband and I are finally feeling better and ready to return to our garden. Some of our eggplants have ripened a little too much, the winged beans are finally giving us their first harvest, and there’s always something new to learn along the way. Today, I’m gathering what the garden has to offer and making the most of our little harvest. I’ll be preparing a traditional batch of Vietnamese salt-brined eggplants, a recipe passed down through my husband’s family, and patiently waiting for them to ferment into something wonderfully crunchy. For lunch, I’m cooking a few familiar dishes from my childhood: winged bean and beef salad, Vietnamese field crab soup with sweet leaf greens, and my mom’s Mekong Delta-style caramelized pork and eggs. With a little homemade pickled eggplant on the side, it’s a comforting meal that brings back memories of home and the flavors I grew up with. Growing our own food has slowly changed the way I think about cooking. Sometimes, I don’t need to plan a menu in advance. I simply walk into the garden, see what’s ready to harvest, and let the ingredients inspire the meal. Perhaps I’ve been planning our meals since the day I first sowed the seeds. Hehe! As I cook, I find myself thinking about the sweetness of my hometown — not just in its food, but also in the warmth and generosity of its people. Life isn’t always sweet, and things don’t always turn out the way we hope. But I believe we can still choose to be kind, to share what we have, and to find happiness in the simple things, like a homemade meal and a place to call home. I hope this little glimpse into our garden and kitchen brings you a moment of peace and comfort. Thank you for spending another quiet day with me. 🤍 With love, Mimi Daisy 🎵 MUSIC IN THIS VIDEO Music from Epidemic Sound 🌿 https://share.epidemicsound.com/zh6qix If you sign up through this link, you'll receive a free trial, and I'll receive a small commission at no extra cost to you. #slowliving #vietnamcountryside #gardening #homecooking #vietnamesecuisine #gardenharvest #simpleliving #fromgardentotable #cozyliving #slowlivingvlog
