🍗 INGREDIENTS
Chicken
• 10 chicken tenders
• ½ tsp salt
• ¼ tsp black pepper
• ½ tsp lemon pepper
• ⅓ cup all-purpose flour
• 2 tbsp olive oil
Creamy Mushroom Garlic Parmesan Sauce
• 1 tbsp olive oil
• 2 tbsp butter
• ½ onion, chopped
• 3 garlic cloves, minced
• 10–12 oz mushrooms, sliced
• ¾ cup chicken stock
• 1 cup heavy cream
• ¼ cup grated Parmesan
• 2 tbsp chopped parsley
• Salt and black pepper, to taste
Buttery Green Beans
• 1 lb fresh green beans, trimmed
• 2 tbsp butter
• ½ onion, chopped
• 2 garlic cloves, minced
• Salt and black pepper, to taste
🔥 DIRECTIONS
1. Brown the Chicken
Pat the chicken tenders dry and season with salt, black pepper, and lemon pepper.
Lightly dredge each piece in flour, shaking off any excess.
Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Brown the chicken for approximately 2–3 minutes per side. The chicken does not need to be completely cooked at this point.
Remove from the skillet and set aside.
2. Make the Creamy Mushroom Sauce
Reduce the heat to medium. Add 1 tablespoon olive oil and 2 tablespoons butter to the same skillet.
Add ½ chopped onion and cook until it begins to soften.
Add the minced garlic and cook until fragrant, just before it begins to turn golden.
Add the sliced mushrooms and cook for 6–8 minutes, until softened and lightly browned.
Pour in the chicken stock and scrape all those flavorful browned bits from the bottom of the skillet. Simmer for 2–3 minutes.
Reduce the heat to medium-low. Add the heavy cream and Parmesan cheese.
Stir and gently simmer for 3–5 minutes, until the sauce begins to thicken. Season with additional salt and black pepper as needed.
3. Finish the Chicken
Return the browned chicken tenders to the skillet and spoon plenty of creamy mushroom sauce over them.
Reduce the heat to low and simmer for approximately 10 minutes, or until the chicken is completely cooked and tender.
Finish with chopped parsley.
4. Make the Buttery Green Beans
Melt 2 tablespoons butter in a separate skillet over medium heat.
Add the remaining ½ chopped onion and cook until softened.
Add the fresh green beans and sauté, stirring occasionally.
Add the garlic, salt, and black pepper. Continue cooking until the green beans are tender and cooked through.
5. Serve It Up!
Place the buttery fresh green beans on the plate, top them with the tender chicken, and spoon PLENTY of that creamy mushroom, garlic, and Parmesan sauce over everything.
