Eel is packed with nutrients that help prevent summer fatigue and aid in recovery. A famous theory traces the custom back to the Edo period, when a scholar named Hiraga Gennai helped an eel shop—struggling with slow summer sales—by putting up a sign reading "Today is the Day of the Ox." The shop became a huge success. There is also a tradition that eating foods starting with the sound "u" (like unagi [eel], umeboshi [pickled plums], uri [melons/gourds], or udon noodles) on the Day of the Ox protects you from succumbing to the summer heat.
