This deep-dive documentary explains how the cheapest bag in the shop became the most quietly important food in human history. We start in a marsh on the lower Yangtze roughly 10,000 years ago, where a scruffy wild grass carried one mutation that changed everything: grain that stopped falling off the stalk. From there the story turns political. Han emperors built granary systems to head off rebellion, a thousand-mile canal was dug because the food grew in one place and the power sat in another, and a single fast-ripening variety imported in 1012 helped double China's population. In feudal Japan rice became the currency itself, with a lord's rank measured in koku and samurai paid in grain. We follow the crop west through the medieval Islamic world into Valencia and the Po valley — the reason paella and risotto exist — and uncover a second, entirely separate rice domesticated in West Africa 3,000 years ago, along with the expertise that made South Carolina the richest colony in British North America.
