Barry White died of kidney failure, and his kidneys failed because of blood pressure he had carried for most of his adult life.
That is a sentence about food, and almost nobody says it out loud when they talk about him.
He was born in Galveston, Texas and raised in South Central Los Angeles by a mother who worked and cooked and kept two boys alive on what was cheap. He was in a county jail at seventeen for stealing tyres, and by his own account he heard a record on the radio in there and came out intending to make music instead.
He spent the next forty years making some of the most luxurious-sounding music anybody has ever recorded, on a diet that was never luxurious at all.
One thing this video says out loud, because it matters: the salt in this food is a legacy, not a failing. Southern and Black American cooking is salt-heavy and fat-heavy because it was built by people preserving meat without a refrigerator and stretching the cheapest cuts available. Calling that a character flaw gets the history exactly backwards. What it does to a body over fifty years is a separate fact, and both of them are true at once.
