“You can’t detect botulism.” True in some contexts, misapplied in most. There’s a version of the botulism fear that stops people from eating food they canned two years ago - sealed, stored correctly, no visible problems - because they’ve heard that botulism leaves no signs. And there’s a version that leads someone to find an unsealed jar and think: botulism is rare, it probably didn’t happen to my jar. Both responses miss something important, and both come from the same misapplied claim. THE THREE THINGS TO TAKE FROM THIS LESSON 1. “Botulism is undetectable” - but it doesn’t mean what most people think it means. The claim is real. The context it applies to is not what most people think. • Newly canned food: There is a window early in bacterial growth where toxin can be forming before visible signs appear. This is the context the “undetectable” claim is actually describing - and it’s real. It’s also why the waiting period exists. • Food that has been sealed on your shelf for a long time: Proteolytic Clostridium botulinum - the strains relevant to home-canned low-acid foods - are putrefactive. As these bacteria grow, they produce gas, build pressure, and given enough time, break seals on jars. A jar that has been sealed and showing no signs of spoilage for an extended period has most likely passed the window where problems would still be invisible. That’s not a guarantee. But it’s a meaningful distinction from a jar you processed last week. • Cold-smoked fish, refrigerated vacuum-packed meats: Non-proteolytic Clostridium botulinum strains can grow at refrigerator temperatures and produce no signs of spoilage at all. This is a genuine concern - but it applies to foods that have been preserved at low temperatures and then sealed in an anaerobic environment. That’s not your home-canned jar of beans. 2. Two strain groups. Two completely different preservation contexts. There are two broad groups of Clostridium botulinum, and confusing them is the source of most of the fear around detectability: • Non-proteolytic strains: Don’t produce gas or visible spoilage signs. But their spores are heat-sensitive and are destroyed well below boiling temperature. They’re not your concern after adequate heat treatment of home canned food. • Proteolytic strains: They break down proteins as they grow, produce gas, build pressure, and given enough time, eventually break seals. Their spores are heat-resistant and can survive boiling. These are the strains you’re managing in home-canned low-acid foods - and they’re the ones that eventually make themselves known. The strains that don’t announce themselves don’t survive your heat treatment. The strains that survive your heat treatment eventually announce themselves. They are not the same strains. 3. An unsealed jar isn’t a failure. It’s the system working. When a jar comes unsealed during storage, the biology has announced itself before you ate anything dangerous. That’s not a catastrophe - it’s the waiting period doing exactly what it’s supposed to do. Nothing about your track record, your experience, or your confidence as a canner makes you individually immune to the odds. The correct response to an unsealed jar is disposal, without tasting, without hesitation, because the jar is telling you something went wrong, and that signal is worth more than whatever is inside it.
