This elegant Triple Mousse Cake features a moist cocoa base and three perfectly balanced mousse layers: dark chocolate, raspberry, and white chocolate. Each layer is silky, airy, and beautifully defined, creating a stunning dessert that looks impressive but is surprisingly easy to prepare.
In this video, I’ll show you step by step how to make the moist cocoa cake, how to prepare each mousse, how to assemble the layers cleanly using acetate, and how to achieve that perfect slice. This recipe is ideal for birthdays, celebrations, or whenever you want a dessert that feels luxurious and refreshing at the same time.
Although traditional chocolate mousse recipes contain eggs, I decided to eliminate some of the more complicated steps by leaving the eggs out altogether. This chocolate mousse contains much fewer ingredients and is SO much easier to make!

Ingredients for the base:
• 200 g sugar
• 60 g cocoa powder
• 150 ml hot water
• 5 g baking soda
• 150 ml vegetable oil
• 140 g all-purpose flour
• 2 whole eggs + 2 egg yolks
• 50 g yogurt
• A pinch of salt
Preparation
1. In a saucepan, combine the sugar, cocoa powder, baking soda, salt, and hot water. Place the saucepan over medium heat and warm the mixture thoroughly, stirring often. Do not let it boil — once it is steaming and well combined, remove it from the heat.
2. Into this warm mixture, pour the vegetable oil and whisk until smooth. Add the flour and continue whisking until fully incorporated. Next, add the eggs and yolks, mixing until the batter becomes glossy and uniform. Finish by folding in the yogurt.
3. Transfer the batter into a 21 cm round springform pan. Bake at 180°C for about 40 minutes, or until a toothpick inserted in the center comes out clean.
This cake yields two layers, but for this recipe you’ll only need one.
4. Slice off the tall dome on top — it makes fantastic cake pops — and keep the flat base layer for assembling the mousse cake.
5. Place the cake layer on a tray, wrap the sides with acetate, and secure the springform ring around it.
🍫Dark Chocolate Mousse
Ingredients
• 150 g dark chocolate
• 150 ml hot heavy cream
• 5 g gelatin
• 3 tbsp cold water
• 150 ml cold heavy cream (for whipping)
Preparation:
1. Heat 150 ml heavy cream until hot but not boiling. Pour it over the dark chocolate and let it sit for 5 minutes. Whisk until the mixture becomes smooth and glossy, like a ganache.
2. Bloom the gelatin by mixing it with 3 tablespoons of cold water. Let it swell, then melt it in the microwave for exactly 6 seconds — just enough to liquefy it. Add the melted gelatin to the warm ganache.
3. In a separate bowl, lightly whip the remaining 150 ml cold cream. It should thicken slightly but remain soft and airy.
4. Fold it gently into the chocolate ganache to create a silky mousse.
5. Pour the mousse over the cocoa cake layer and place the pan in the freezer for 5 minutes while preparing the next mousse.
🍓Raspberry Mousse
Ingredients
• 230 g frozen raspberries
• 90 g sugar
• 5 g gelatin
• 3 tbsp cold water
• 150 ml cold heavy cream (for whipping)
Preparation
1. In a saucepan, cook the raspberries with the sugar, stirring constantly until the berries soften and the sugar dissolves. Blend the mixture thoroughly with an immersion blender, then strain it through a fine sieve to remove all seeds. You’ll get a smooth, vibrant raspberry purée.
2. Bloom the gelatin with cold water, melt it briefly, and stir it into the warm raspberry mixture.
3. Lightly whip the cold cream, just as before, and fold it into the raspberry base.
4. Remove the cake from the freezer, check that the chocolate mousse has set, and pour the raspberry mousse on top. Freeze again while preparing the final mousse.
🍰White Chocolate Mousse
Ingredients
• 150 g white chocolate
• 140 ml hot heavy cream
• 5 g gelatin
• 3 tbsp cold water
• 150 ml cold heavy cream (for whipping)
Preparation
1. Prepare the white chocolate mousse exactly as you did the dark chocolate one: hot cream over chocolate → rest 5 minutes → whisk → add melted gelatin → fold in lightly whipped cream.
2. Pour the white chocolate mousse over the raspberry layer. 3. Refrigerate the cake for at least 2 hours, or until fully set and firm.
Once chilled, remove the ring and acetate, slice cleanly, and enjoy the beautiful three-layer mousse cake.
