Chicken Divan: SPICE UP that Boring Chicken Breast - Diana's Kitchen

This is such a great recipe, especially if you love the flavor of curry! It’s the perfect recipe for a quick weeknight meal when you have leftover chicken that you want to spice up a bit!
Ingredients:
2 Chicken breasts (if you don’t have any cooked already, you can boil them in a pot of water and a little salt for 12-15 minutes. Have some leftover chicken thighs? Those work too!)
1 Bag of broccoli florets
1 1/2 Cup Shredded cheese
1 Cup Mayonnaise
1 Cup Sour Cream (You can substitute with yogurt here if you’d like!)
2 Tbsp Lemon Juice
2 Tbsp Curry powder (to taste)
Preheat your oven to 375 degrees
In a baking pan, arrange the broccoli in a single layer and put your chicken on top. You don’t have to shred your chicken and cover every inch of the broccoli, personally I like to have the bigger pieces of chicken so that it’s easier to portion while serving.
For the sauce, combine your sour cream (or yogurt like me!), mayonnaise, lemon juice and curry power and give it a mix. Once everything is well incorporated, give it a taste. You should be able to taste the curry AND the brightness of the lemon juice, you can add more of either as you see fit. If you freshly squeezed your lemon juice, don’t be afraid to add some lemon zest!
Once the sauce is flavored to your liking, add 2/3 of the cheese, give it a mix, and pour it over the chicken and broccoli. After, sprinkle the remaining cheese on top and pop it into the oven for 30 minutes.
Let it cool for a bit and you’re ready to serve!
