Every cuisine carries the weight of its history, but it also holds the possibility of reinvention. Bengali food is no different. Deeply rooted in tradition, shaped by generations of home cooks and regional influences, it is a cuisine that evokes nostalgia in every bite. But can these familiar flavours be presented in a way that feels contemporary without losing the emotions they carry? That is the question Sienna has been quietly exploring over the years.
In this episode, we spend a day with Chef Abhinandan Kundu, Head Chef of Sienna, to understand the philosophy behind one of Kolkata's most admired culinary destinations. Our day begins at the bustling Gariahat Market, where the chef sources fresh ingredients. Before stepping into Sienna, we make a stop at one of the chef's favourite breakfast spots to enjoy Petai Porota with Ghughni and Luchi-Cholar Dal and the experience was quite amazing.
At Sienna, food is not merely about innovation for the sake of novelty. It is about looking inwards towards Bengal's farms, rivers, forests, kitchens and food memories. Every ingredient is chosen with intention, every dish is built on a foundation of tradition and every technique is used to enhance. It is this delicate balance between memory and modernity that defines Sienna's identity.
Our meal reflects this philosophy beautifully, with every course offering a fresh perspective on familiar ingredients and flavours. From Mochar Salad, Cheese Puff, Golda Chingri with Ghilu Hollandaise Sauce and Chilli Chimichurri, Chilli Bheja, Chingri Lace Dumpling, Macher Dimer XO Rice with Fried Egg and Ros Omelette with Mutton Jhol to desserts like Aam Doi, Mishti Doi Creme Brulee and Mango Crumble Cake, each dish tells a story of Bengal, reimagined with intention.
