Yes, lemons freeze, but whole thawed wedges go slack, so freeze the juice and zest you will actually use.
Wash firm unmarked lemons first, and decide how much juice and zest each portion should hold.
Zest the lemons before juicing them, taking only the coloured layer and stopping at the pith. Strain the juice clear of seeds, pour it into an ice-cube tray with headspace left in every well, and pack the zest separately. Compare a taut fresh wedge with a slack thawed one, then whisk the thawed juice and zest into a lemon dressing.
Juice expands as it freezes. A container filled to the brim pushes its own lid open, so leave room at the top.
Drop a juice cube into dressings, sauces, marinades or drinks, and keep the frozen zest for baking.
