This ODD Appalachian Breakfast filled hungry stomachs throughout the depression, and stayed on the menu of those who valued its comforting caress. While biscuits and gravy fed many across the US and the WHOLE South, West Virginia added fried beans to stretch the meal even further, and added much needed protein and fiber for farmers and coal miners alike. This regional favorite was a staple in my grandmas house, as well as in our home when I was a child growing up. I would eat this for breakfast, go to my grandmas for second breakfast, and my aunts for thirds! And yes… all three places would often make this. It’s filling, stays with you, and not bad for you, in moderation:) I hope you’ll give it a try, and let me know what you think.
