Brian Duffy has opened 109 restaurants, is about to open his 110th, and prices a burger line by line here to show why independent operators quietly destroy their own margins: 80/20 ground beef at $3.89 a pound puts $1.70 to $1.80 of beef alone into an eight-ounce patty, the bun that used to cost 42 cents is now 65 cents, and a head of lettuce went from $1.00 to $2.25. Charge $9 for that burger and the operator is locked into a 40% food cost, or forced to buy lower-quality product just to defend the price point. Duffy's alternative is to buy for quality and take price. A 15-dozen case of commodity eggs runs $28.79 against $36.50 for farm-fresh — roughly 8 to 10 cents more per egg, or about 30 cents on a three-egg omelet — which is why he will sell that omelet at $13 instead of downgrading the ingredients. He argues most owners and chefs never learn to cost out a recipe, and that the chef's instinct to attack food cost by swapping to cheaper product is not an apples-to-apples comparison. He would rather run 25 menu items executed at the highest level than a long menu he cannot deliver consistently. He also traces how the first season of Bar Rescue turned him from a working chef into a chef with a platform, and how he used it to build a consulting practice that serves mom-and-pop operators alongside NDA work with major restaurant groups.
