Fourteen kinds of ice cream, every one invented for a specific reason — climate, religion, a broken machine, or someone trying to copy another dessert.
Walk into any supermarket freezer aisle and you'll find a dozen tubs that look nearly identical. Around the world, people have been freezing dairy, water, and fat for more than two thousand years and invented something closer to forty genuinely different kinds. These fourteen are the ones that keep showing up — from a stretchy Turkish mastic ice cream pulled on a stick, to Alaskan Eskimo ice cream made with seal fat and wild berries, to a German dessert that looks exactly like a plate of spaghetti.
Play along: count how many of the fourteen you've actually tasted. The average person gets four. Hit eight and you've eaten more ice cream than nine out of ten Americans.
