Sakura Matcha Panna Cotta | A Spring Dessert in Full Bloom

Ingredients Matcha Panna Cotta — 1 envelope gelatin powder — 1/4 cup cold water — 2 tsp Matcha.com matcha — 1 cup milk, divided (1/4 & 3/4) — 1 cup heavy cream — 1/3 cup granulated sugar Cherry Blossom Jelly — salt-pickled cherry blossoms — 1/2 envelope gelatin powder — 1/8 cup cold water — 1 cup boiling water — 1/4 cup cherry blossom syrup — 1 tbsp granulated sugar (optional) Directions Matcha Panna Cotta — Mix gelatin and cold water together. Set aside to bloom for about 5 minutes. — Sift matcha into a bowl and add 1/4 cup of the milk. Whisk until well combined (“cold whisking”). — In a saucepan, add cream, the rest of the milk, and sugar. Bring to a simmer, stirring continuously. — Turn off the heat and mix in the bloomed gelatin until completely dissolved. Stir in the matcha mixture. — Transfer the mixture to a spouted cup, while passing it through a fine mesh sieve. — Pour into 4-6 cups and let it cool at room temperature, then refrigerate for 4 hours to set. Cherry Blossom Jelly — Rinse salted cherry blossoms in warm water. — Mix gelatin and cold water together and set aside to bloom. — Mix boiling water, cherry blossom syrup, and sugar until dissolved. — Add the bloomed gelatin and mix until dissolved. — Let the mixture cool slightly and pour it on top of the set matcha panna cotta. — Add the cherry blossoms and refrigerate for 4 hours or overnight to set.
