Vegan California Rolls (Makes 4 rolls)
INGREDIENTS:
4 cups freshly cooked short grain rice (1 ½ cups uncooked)
2 teaspoons sushi rice seasoning
1 package of 8x8” nori sheets
1 ½ tablespoons mayonnaise
1 7 oz. package enoki mushrooms
1 teaspoon Trader Joe’s umami mushroom seasoning (see note for substitutions)
1 tablespoon sesame oil
1 stalk green onion, thinly sliced
Sesame seeds for garnish (optional)
1 Japanese cucumber, thinly sliced
2 avocados, pitted, skinned and thinly sliced
DIPPING SAUCE:
2 tablespoons soy sauce
½ teaspoon wasabi paste (optional)
Pickled ginger for serving
EQUIPMENT:
Wooden spatula
Bamboo sushi rolling mats
Folding fan or manila folder
DIRECTIONS:
Make the filling. Slice the enoki mushrooms in 1” pieces, and break apart into small bundles. Place in a small bowl. Add the umami seasoning and toss to lightly coat. Heat the sesame oil in a medium skillet. Add the mushrooms and cook until browned, about 2-3 minutes. Set aside to cool.
Once the mushrooms are cooled, mix together in a small bowl with the mayonnaise. Add sliced green onion and chill in the fridge for 15 mins.
Season the hot rice by sprinkling the rice with the sushi seasoning. Use a wooden spatula or rice spatula to coat the rice in the seasoning by folding together in a cutting motion. Set aside to cool to room temperature.
Assemble the sushi. Set-up a mise en place with the mushroom filling, sliced avocado, and sliced cucumbers, sesame seeds, rice, and a small bowl of water. Place one sheet of nori on a bamboo rolling mat. Spread a thin layer of rice on the nori sheet. Sprinkle the rice with sesame seeds. Flip the nori sheet over. Evenly distribute one spoonful of mushroom mixture in a horizontal row on the lower ⅓ of the nori sheet closest to your body. Add a couple slices of avocado and cucumber. Carefully lift the edge of the nori sheet closest to your body and roll away from you. Roll slowly and gently squeeze along the roll as you go. When you have rolled the entire roll, give it one final squeeze before removing the bamboo mat.
Use a sharp knife to slice the roll into 6 or 8 pieces. Serve with the dipping sauce and pickled ginger.
NOTE: Don’t want to hunt for umami seasoning? Simply use ½ tsp each of salt and pepper to season the mushrooms, it’ll be just as good!

Christy was married to her husband on New Years Eve , 2013 in Banff, Canada after having met in a screenwriting class in college. She became impassioned with directing and made her debut in Lionsgate’s “Christmas All Over Again”.
