This Italian Eggplant Pasta Is So Easy That Anyone Can Cook It | Food That Looks After You
If you have always wanted to cook Italian food but thought it might be difficult, this recipe is for you. This Italian eggplant pasta is one of those wonderfully simple meals that proves just how approachable Italian cooking can be. Made with a quick tomato sauce, garlic, fresh basil, olive oil and beautifully soft eggplants, it is full of Mediterranean flavour while using everyday ingredients that are easy to find. Even if you have never cooked pasta before, I will guide you through every step.
This recipe is part of my Food That Looks After You series, celebrating simple Mediterranean meals that nourish us, comfort us and remind us that good food does not need to be complicated. Sometimes the most satisfying dishes are also the simplest.
Although I have called this an Italian eggplant pasta, this particular recipe comes from Sicily, where eggplants are one of the true stars of summer cooking. Families have been making dishes like this for generations because they are affordable, seasonal and incredibly delicious.
Whether you are completely new to Italian cooking or have been cooking for years, I hope this recipe reminds you that confidence in the kitchen often begins with simplicity.

INGREDIENTS (Serves 2–3)
• 2 medium eggplants (about 600g / 1.3 lb)
• 2 garlic cloves
• 1 × 400g (14 oz) tin of cherry tomatoes
(or chopped tomatoes with 1 tsp sugar if preferred)
• Fresh basil
• 2 tbsp extra virgin olive oil, plus a little extra to finish
• Salt and freshly ground black pepper
• 250–300g (9–11 oz) pasta
(spirali, rigatoni, spaghetti or your favourite shape)
• Grana Padano, Parmigiano Reggiano or Pecorino (optional)
COOKING METHOD
Let us begin with the garlic. There is no rush here. Place the olive oil and chopped garlic into a cold saucepan before switching the heat on. Starting from cold gives the garlic time to gently perfume the oil without burning. It is one of those little things that makes a remarkable difference, especially in a simple sauce like this.
Once the garlic begins to release its aroma, add the tomatoes, fresh basil, salt and pepper. Place the lid on and allow everything to simmer gently for about 15 minutes. While it quietly bubbles away, the tomatoes become sweeter and the basil softens beautifully into the sauce.
Now let us prepare the eggplants.
If you have never cooked eggplants before, do not worry. Slice them into strips, place them into a frying pan with a little olive oil and put the lid on before turning on the heat. By cooking them gently with the lid in place, they soften in their own steam while absorbing only a modest amount of oil. It is a lovely way of bringing out their natural flavour without making them heavy.
After about 15 minutes they will have become wonderfully soft and almost translucent. Season them with a little salt and pepper, add a final drizzle of olive oil and give them a gentle stir. At this stage they are already delicious enough to enjoy on their own.
Bring a large pan of well-salted water to the boil before adding the pasta. If this is your first time cooking pasta, simply follow the cooking time on the packet. If you enjoy pasta al dente, stop about a minute earlier.
Drain the pasta and stir it through the tomato sauce. Then add most of the eggplants and give everything half a minute together over the heat. This allows all the flavours to come together without rushing.
Serve immediately with the remaining eggplants on top, a little fresh basil and, if you wish, a light grating of Grana Padano or Parmigiano Reggiano.
