Resep Sarden Kaleng. Sambal rica-rica merupakan masakan khas Manado yang cocok dipadukan dengan berbagai macam protein. Kali ini aku menggunakan Sarden Yamato. Ciri khas rasa pedas dan aroma harum kemangi dipadukan dengan ikan sarden goreng semakin menambah tekstur dan cita rasa masakan.
Resep Sarden Rica-Rica (untuk 1 piring 5-6 porsi)
Bahan:
2 kaleng Sarden Yamato
250 ml minyak goreng
Bumbu rica-rica:
5 siung bawang putih
3 kemiri
8 siung bawang merah
10 buah cabai rawit
8-12 cabai merah besar
2 cm jahe
1 ruas kunyit
1 batang serai
100 ml minyak
50 ml air
15 daun kemangi
1 batang daun bawang
1 daun salam
8 daun jeruk
2 daun pandan
1 daun kunyit
½ sdt garam
¼ sdt merica
1 sdt gula
½ sdt kaldu jamur
Langkah:
1.Tiriskan ikan sarden di atas tisu, simpan kuah sarden untuk nanti
2. Panaskan minyak, taburi dengan sedikit tepung agar minyak tidak meledak. Masukkan ikan sarden dan goreng hingga kering lalu tiriskan
3. Goreng bawang merah, bawang putih, dan kemiri. Masukkan ke dalam food processor lalu blender hingga halus
4. Goreng cabai merah, cabai rawit, kunyit, jahe, dan serai. Masukkan ke dalam food processor, blender sebentar jangan terlalu halus
5. Tumis bumbu halus, daun salam, daun jeruk, daun pandan, dan daun kunyit hingga wangi
6. Masukkan ikan sarden goreng, air, dan sedikit kuah sarden. Aduk rata
7. Bumbui dengan garam, merica, gula, dan kaldu jamur
8. Masukkan daun kemangi dan daun bawang, lalu matikan api
9. Sarden Rica-Rica siap disajikan

Manado's Sardines Rica-Rica Recipe
Rica-Rica Sambal is a Manadonese dish that can be combined with various proteins. This time, I'm using Yamato Sardines. The signature spicy flavor and lemon basil aroma mixed with fried sardines will enhance the dish's texture and taste.
Sardines Rica-Rica Recipe (yield 5-6 servings)
Ingredients:
2 cans Yamato Sardines
250 ml oil
Rica-Rica ingredients:
5 clove garlic
3 pc candlenuts
8 pc shallots
10 pc bird's eye chili
8-12 pc large red chili
2 cm ginger
2 cm turmeric
1 pc lemongrass
100 ml oil
50 ml water
15 lemon basil
1 pc scallions
1 pc bay leaf
8 pc Kaffir lime leaves
2 pc pandan leaves
1 pc turmeric leaves
1/2 tsp salt
1/4 tsp pepper
1 tsp sugar
1/2 tsp mushroom stock powder
Steps:
1. Pat dry the sardines with a paper towel. Keep the sauce for later.
2. Heat the oil. Sprinkle some flour so the oil doesn't splash out. Add the sardines and fry until dry. Set aside.
3. Fry the shallots, garlic, and candlenuts. Add to the food processor and blend to a fine paste.
4. Fry the chili, bird's eye chili, turmeric, ginger, and lemongrass. Add to the food processor and blend. The texture shouldn't be too fine.
5. Sauté the spice mix with bay leaf, Kaffir lime leaves, pandan leaves, and turmeric leaf until fragrant.
6. Add the fried sardines. Add some water and a bit of the sardines sauce. Mix well.
7. Season with salt, pepper, sugar, and mushroom stock powder.
8. Add the lemon basil and scallions in. Turn the heat off.
9. Sardines Rica-Rica is ready to serve.
