This is a recipe for Authentic Homemade Goan Pork Sausages. Courtesy - my mom! Everybody loves the sausages she makes and i thought I'll share her recipe to carry her legacy forward. Ingredient List: Pork Meat - 2 kgs Ginger - 3 pieces of 2 inches each Garlic - 2 full garlic flowers Kashmiri Chillies - approx. 30 dried red chillies Cinnamon - 3 inch piece Turmeric - 3 inch piece Black Pepper - 1 table spoon Cloves - 1 teaspoon full Star Spice - 2 pieces Mace - 2 pieces Jeera - 1 tablespoon Salt - As needed Lemon - 1 Vinegar (preferably local Goan coconut toddy Vinegar) - 3/4th - 1 cup
