🍮 Soft & Spongy Rasmalai Recipe |
🛒 Ingredients
For Chenna / Rasmalai Balls
Full-fat milk – 1 litre
Lemon juice – 2 tablespoons, diluted with 2 tablespoons water
Cold water – for washing the chenna
For Sugar Syrup
Sugar – 1 cup (200 g)
Water – 4 cups (960 ml)
For Rabri
Full-fat milk – 1 litre
Sugar – 5–6 tablespoons (60–75 g), according to taste
Cardamom powder – ½ teaspoon
Saffron – 10–12 strands
Warm milk – 1 tablespoon, for soaking saffron
Chopped pistachios – 2 tablespoons
Chopped almonds – 2 tablespoons
For Garnishing
Saffron strands – a few
Pistachio slivers – 1 tablespoon
Almond flakes – 1 tablespoon
Optional: dried rose petals
👩🍳 Method
1️⃣ Make the Chenna
Pour 1 litre full-fat milk into a heavy-bottomed pan.
Bring it to a gentle boil while stirring occasionally so the milk doesn't stick to the bottom.
Reduce the flame.
Mix 2 tablespoons lemon juice with 2 tablespoons water.
Add the diluted lemon juice gradually while stirring gently.
Stop adding lemon juice as soon as the milk separates into soft white chenna and greenish-yellow whey.
⭐ Important Tip
Don't add all the lemon juice at once. You may not need the entire quantity depending on the milk.
2️⃣ Wash & Drain the Chenna
Pour the separated milk through a clean muslin cloth.
Wash the chenna thoroughly with cold water to remove the lemony taste.
Tie the cloth and hang it for approximately 20–30 minutes.
The chenna should retain a little moisture.
Don't make the chenna completely dry. Slight moisture helps produce soft rasmalai.
3️⃣ Knead the Chenna
Transfer the chenna to a clean plate.
Knead it with the heel of your palm for approximately 8–10 minutes.
Continue until the chenna becomes smooth, soft and lump-free.
There should be no cracks when you form a small ball.
⭐ Secret Tip
Don't add maida or sooji. Properly prepared and kneaded chenna is enough for soft rasmalai.
4️⃣ Shape the Rasmalai
Divide the chenna into approximately 12–14 equal portions.
Roll each portion into a smooth ball.
Flatten gently between your palms.
Make sure there are no cracks around the edges.
🍯 5️⃣ Cook the Rasmalai
Take a wide pan.
Add 1 cup sugar + 4 cups water.
Bring the syrup to a strong rolling boil.
Carefully add the flattened chenna discs.
Cover the pan with a lid.
Cook on medium-high heat for approximately 12–15 minutes.
The discs will expand and become light and spongy.
⭐ Important Tip
Use a wide pan and don't overcrowd it. The rasmalai needs enough space to expand.
🥛 6️⃣ Prepare the Rabri
Pour 1 litre full-fat milk into another heavy-bottomed pan.
Bring it to a boil.
Reduce the flame and cook on low to medium-low heat.
Stir frequently and scrape the sides of the pan.
Reduce the milk to approximately 700–750 ml.
Add 5–6 tablespoons sugar.
Add ½ teaspoon cardamom powder.
Soak 10–12 saffron strands in 1 tablespoon warm milk for a few minutes.
Add the saffron milk to the rabri.
Add chopped almonds and pistachios.
Cook for another 2–3 minutes.
The rabri should be creamy but not extremely thick, because the rasmalai will absorb some of it.
❤️ 7️⃣ Combine
Remove the cooked rasmalai discs from the sugar syrup.
Gently press each one between two spoons to remove excess syrup.
⚠️ Don't squeeze them hard, otherwise they can break.
Place the rasmalai discs into warm—not boiling—rabri.
Gently spoon rabri over the top.
Allow them to soak for at least 30 minutes.
❄️ 8️⃣ Chill & Serve
Transfer the rasmalai to a serving bowl.
Garnish with:
Saffron strands
Pistachio slivers
Almond flakes
Optional dried rose petals
Cover and refrigerate for at least 4–6 hours.
For the best flavour and texture, let it chill overnight. 😍
🍽️ Yield
Approximately 12–14 pieces
⏱️ Approximate Time
Preparation: 30–40 minutes
