Fresh lamb is hand-chopped with herbs, garlic, onions, and traditional spices before being carefully shaped onto a massive skewer and grilled over charcoal. It’s one of the most impressive kebab-making experiences I’ve ever seen. Then I traveled to Kabul to visit the famous Vahid Restaurant, where the legendary Chainaki has been served for generations. Slow-cooked inside traditional kettles with tender lamb, chickpeas, beans, and rich broth, this nearly century-old dish is one of Afghanistan’s true comfort foods.
