Preheat oven to 350°F (175°C). Line a 9×9 inch pan with parchment paper. 2. Melt butter (microwave or stovetop) until just melted, not bubbling. 3. Whisk hot butter + sugar together vigorously for 1–2 minutes→ This step is key for the flaky, shiny top. 4. Add eggs and vanilla, whisk hard for another 30–60 seconds until thick and glossy. 5. Sift in cocoa powder, flour, salt, and baking powder.Fold gently until just combined (don’t overmix). 6. Pour into pan and smooth top. 7. Bake 20–25 minutes Toothpick should come out with moist crumbs, not wet batter. 8. Cool completely before slicing (hardest step, but worth it). Pro Tips for the BEST Flaky Top Use white sugar, not brown Whisk sugar + butter + eggs well Don’t overbake—fudgy brownies crack more than dry ones Let them cool fully for clean slices Angara Chicken Gravy Ingredients 1 kg chicken 4 medium onions, fried (birista) 2 large tomatoes, pureed ½ cup thick yogurt ⅓ cup ginger-garlic-green chilli paste 2 tbsp Kashmiri red chilli powder 2–3 tbsp Angara Masala 1 tsp crushed Kasoori methi Juice of ½ lemon Salt to taste ½ cup oil 1½–2 cups hot water (adjust for desired consistency) 2–3 tbsp fresh cream (optional) 1 tbsp butter (optional) Fresh coriander, chopped Aromatic Spice Mix 2 mace blades 4 green cardamoms ½-inch cinnamon stick ¼ whole nutmeg Dry roast, cool, and grind into a fine powder. Method 1. Marinate the chicken with fried onions, tomato puree, yogurt, ginger-garlic-green chilli paste, Kashmiri chilli powder, Angara Masala, salt, Kasoori methi, lemon juice, and oil for at least 30 minutes. 2. Cook in a heavy-bottomed pan over medium heat until the masala thickens and the oil separates. 3. Add 1½–2 cups hot water, cover, and simmer on low until the chicken is tender. 4. Sprinkle in ½–1 tsp Aromatic Spice Mix and simmer for 2–3 minutes. 5. Finish with butter and cream (if using), garnish with fresh coriander, and serve. Optional Angara Smoke Place a small bowl in the pan, add a hot charcoal piece, drizzle a few drops of ghee over it, cover immediately, and smoke for 3–5 minutes before serving.
