In E mode, turning the knob changes the pump setting during the shot; the response is not instantaneous. The percentage settings describe pump control, not a guaranteed flow rate or brew pressure at the puck. Pressure also depends on resistance from your grind, dose and puck preparation. The grinder setting remains unchanged for the demonstrations, so these shots illustrate the controls rather than an optimized recipe or a controlled taste comparison.
